So I mentioned that it’s been a bit of stressful time over here… both of my kids were sick with the flu, and the school year is wrapping up (so many theme days, teacher gifts, recitals, etc!). I am (very excitedly!) preparing for our vacation, but that comes with its own challenges too. Obviously, these are not real problems, but I’ve been a bit frazzled, and have less time/bandwidth than usual to cook for myself and instead have been craving all of the salty/sweet things that don’t make me feel my best.
After a particularly long day last week, I started craving cookie dough in a major way. I was unable to distract myself with Netflix and a hot cup of tea, and so walked into the kitchen to see what I could quickly whip up without dirtying too many dishes and/or resorting to less-than-ideal ingredients. Within 5 minutes, I had exactly what I had been craving - salty sweet vanilla-tinged dough with large chunks of chocolate throughout - without the use any refined flours, sugars or vegan butter (so you won’t feel like total crap afterward). This recipe makes a good amount, so you can grab a spoonful or two whenever a craving hits and still have it last a long while.
