Butter Pecan Ice Cream

My plant-based take on a classic favorite.

There are a few foods that bring me right back to my childhood, and butter pecan ice cream is pretty near the top of that list. I remember the excitement I’d feel when I’d see a tub of it in the freezer; it felt like a “grown up” flavor and the buttery pecans swirled in with salty sweet ice cream were nothing short of heavenly to my enraptured 8 year old self.
