With September in full swing, both of my girls are officially back in school and I’m re-committing to meal planning and cooking most of our meals at home after a less structured, indulgent summer. As I’ve mentioned before, I’m a big believer in the value of family meals, so I’m always on the lookout for healthy food to feed my family on school nights that doesn’t require a ton of prep or active cooking time, but still hits the mark for little and big tastebuds, alike.
A few years ago, I was developing a recipe for a client with basically these same parameters in mind. I also wanted minimize dishes and have the majority of ingredients be things that most people already have on hand. I landed on a Cheesy Broccoli Quinoa Casserole, and while the original version was pretty great (if I do say so myself), I’ve been tinkering with the recipe over the years, and the current iteration is even more flavorful, comforting and - the best part - just as easy.
