Chickpea Frittata with Caramelized Onions (& Happy Mother's Day!)
Plus, a springtime pesto you'll want to slather on EVERYTHING.
Happy Mother’s Day to all of the beautiful moms out there. Whether you are a mom yourself (to a human or fur baby), an expecting mom, celebrating your own mother, or just showing love to other moms in your life, today is a day to celebrate the unconditional love and sacrifice that comes along with wanting, having and raising a child.
I also want to acknowledge that Mother’s Day isn’t easy or love-filled for everyone. If you have a fractured relationship with your mother, are grieving your mother, facing scrutiny over the conscious decision to not have a child, dealing with pregnancy loss or infertility, or are a mother who has lost a child…I am sending you love, comfort and hope for happier, easier days ahead. This post is as much for you as it is for anyone. Take care of yourself today, too.
