Once upon a time, when we were still dating, my husband and I were living in New York City and toiling away at our former jobs in finance. I was feeling particularly restless one spring afternoon at work - at this point, I was already mentally done with Wall Street and dreaming of culinary school - and started searching airfare for future vacations; I stumbled upon a ridiculously good deal to Costa Rica, sent a text to my husband, and a few hours later, we were booking two round trip tickets to San Jose and researching hotels.
And so our love affair with Costa Rica began. Almost immediately upon stepping off the plane, we became enamored with the country, prompting us to return multiple times before the birth of our first daughter. If you’ve ever been to Costa Rica, you’re likely familiar with the jaw dropping scenery, the kind and generous people, the incredible wildlife, the delicious (plant-based friendly) food and nationwide focus on sustainability/cultural reverence for the planet. It’s truly a special place.
