Green Goddess Pasta Salad

You may (or not, lol) have noticed that I’m in your inbox a day early today! Since tomorrow is Independence Day, I’m hoping you have plans to spend the day doing something fun and/or relaxing, and not hanging around too close to your inbox. Either way, I have a recipe for Green Goddess Pasta Salad that’s perfect for your 4th of July gathering, whether it’s a big ordeal with lots of family and friends, or just you and a few loved ones gathering around the table. It would also be a great addition to your next potluck, tailgate, brunch or picnic menu!
When it comes to summer barbecue and picnic fare, I’m a fan of most of the plant-based classics: veggie burgers/dogs, corn-on-the-cob, kebabs…it’s all good. There is one subcategory, however, that I approach a bit more tentatively: pasta/potato salads. I’m not a big fan of mayo-laden salads in general, but the fact that they usually appear at hot, humid outdoor gatherings is…not appealing. They can also be drab, a little too sweet, and devoid of any real nutritional value. Let’s change that, shall we?
