Last summer, it was seemingly every other day that my husband would come in from the garden with an armful of zucchini (some the size of baseball bats). It wasn’t long before zucchini was stuffed into every available crevice of my refrigerator and overflowed onto the countertops. We were giving away zucchini to anyone who would accept it, and still had more than we could use. Come September, Mark vowed to grow less zucchini next summer, and I knew I needed to get a bit creative and find new ways to use it up.
