When I was pregnant with my first child, I used to daydream about what different aspects of parenthood would be like. I imagined cozy bedtime stories, family movie nights, and Christmas mornings. For the most part, the things that I romanticized pre-kids have been as great in real life as I’d hoped. A few exceptions: bath time (so. much. water. everywhere.) and packing school lunches.
You would think that someone who has shaped their profession around food and cooking would seamlessly adapt into joyfully preparing lunches for their kids. I thought so too! Until I had kids…who need to eat lunch apparently every single day! Kidding aside, it’s been a challenge to come up with filling, nutritious, plant-based, packable, nut-free (our district is nut-free) and appealing-to-picky-little-palates lunches. It can sometimes feel a bit like this:
Now that I’m a several years deep into the school lunch thing, I have a few tips, ideas and suggestions that I’m happy to share.
